Different Type of Chocolate
It is hard to find someone who doesn't like chocolates. Many know that chocolate is refined product obtained from cocoa beans but have you ever given a thought to how many chocolate types are there? You will be surprised to know that there are a number of enticing types of chocolates.
Cocoa powder is unsweetened powder of cocoa beans slightly defatted. The powder renders an intense chocolate taste. This is available in two varieties; one is Dutch processed which is alkalized and other is natural variety. The powder is light brown and has a pronounced flavor. The alkalized variety is milder, less acidic, and darker in color.
Unsweetened chocolate is called as 'bitter' and is pure chocolate liquor obtained from ground cocoa beans. This has quite a bitter taste and is usually used for cooking purposes. Since cocoa is rich in cocoa solids and cocoa butter this unsweetened chocolate gives a deep flavor to baked goods. This is used as the base ingredient to prepare all other forms of chocolate except the white chocolate.
Dark chocolate contains sugar, vanilla, cocoa butter, lecithin which is an emulsifier along with chocolate liquor. No milk solids are ever added in the dark chocolate. The darkness of dark chocolate depends upon the cocoa percentage in it which may vary from 30% to 70%.
Bittersweet chocolates and semi sweet chocolates belong to the category of dark chocolates. As defined by the Food and Drug Administration department, bittersweet chocolate should contain at least 35% of cocoa solids. Most of the bittersweet bars contain 50% chocolate liquor. These types of chocolates have a bitter flavor than sweet dark and semi sweet chocolates. Since the amount of sugar is not regulated by FDA the sweetness may vary from manufacturer to manufacturer. Semi sweet chocolates also contain at least 35% of cocoa solids but are sweeter than the bitter sweet chocolates.
Sweet dark chocolate is dark in the sense that it does not contain milk solids. This chocolate contains a high percentage of sugar which gives it a much sweeter taste than other types of chocolates. Many available brands of sweet dark chocolates contain 20 to 40 percent of cocoa solids.
One of the most popular chocolate types is milk chocolate that contains condensed milk or dry milk solids along with the chocolate liquor. These milk solids may constitute up to 12 percent of chocolate. These are typically much sweeter with light color and a mild chocolate taste.
The class of white chocolates derives its name from the ingredient cocoa butter in it. This chocolate does not contain any other product other than cocoa butter. This is the reason why this chocolate has a mild chocolate flavor, has a vanilla taste, and a lighter color.
Couverture chocolates and related chocolate types are used by confectioners and are rich in cocoa butter and cocoa liquor percentage which contribute to the high price of this chocolate. These chocolates are smooth and melt quickly.
Gianduja chocolates are made from the chocolate and the nut paste. These are used for flavoring milk or dark chocolates. These bars are all made using natural low GI sweeteners, so they have the added benefit of being sugar-free (and are also dairy-free so suitable for vegans and those with a dairy intolerance).

Remember dogs can eat lots of things that we cannot stomach, but they cannot eat everything that we can, so always keep your food out of a dogs reach.

Chocolate Antioxidant
The mood-improving benefits of chocolate antioxidants have long been known, but now this treat has revealed another healthy secret--it can also help prevent cancer and heart disease. Dark chocolate, eaten without milk, has been shown to contain more antioxidants than either red wine or green tea. To understand the importance of this discovery, one should understand why antioxidants are of such importance to the human system.
As the human body uses oxygen, highly reactive byproducts, known as free radicals, are formed. Chocolate antioxidants can aid in fighting these. In essence, a free radical is an atom or molecule that, during the chemical processes a body uses to function, loses an electron. The manner in which these rogue agents operate is, on the surface, simple: an atom missing an electron is unstable and will attempt to regain stability by either shedding or gaining an electron. When the free radical successfully steals or gives an electron to another molecule, it becomes stable once again. The molecule that donated or received the electron, however, is now unstable, and becomes a free radical itself. This creates a chain reaction that, left unchecked, can eventually upset the balance of whole cells, leading to severe disruption in the affected system and manifesting as any number of diseases and cancers.
While free radicals do present a clear problem to the human system, the body can use chocolate antioxidants to defend itself from the damage they cause. Found in food products and used by the body to arrest the damage caused by free radicals, antioxidants are molecules that seek out and stabilize free radicals by donating electrons to unstable molecules, ending the destructive chain reactions. Once an antioxidant has ended a reaction, though, it becomes unstable and begins to hunt stable molecules itself. Because of this continual process, it is important that the body maintain the balance of oxidants and antioxidants by continually replenishing its supply of the latter to prevent the cellular and systemic damage these reactions cause.
The antioxidants that cocoa products contain, polyphenols and flavonoids, protect the heart and cardiovascular system from damage in much the same way an aspirin regimen does; it prevents blood platelets from clotting, thereby reducing the risk of heart attack and stroke significantly. Chocolate antioxidants, though, has two significant health benefit that aspirin does not--it improves arterial health and lowers blood pressure.
High blood pressure, or hypertension, is a serious health concern; it has been directly linked to such problems as congestive heart failure, kidney failure, and cerebral damage as well as heart attack and stroke. By stimulating nitric oxide production in the vascular system, the flavonoids in chocolate cause the body to trigger a reaction that both dilates and relaxes blood vessels, increasing blood flow. This causes a drop in blood pressure, reducing the risk for cardiovascular distress.
Milk, though, causes chocolate antioxidants lose nearly all of its antioxidant benefits; the polyphenols in the chocolate bond to protein in the milk, effectively neutralizing the antioxidant boost gained by having a cocoa based snack. This applies both to milk chocolate and drinking milk with dark chocolate. For a body to completely process the antioxidants in chocolate, milk cannot be present during the digestive process; a person eating coco for its health benefits should avoid both milk and milk coco for at least an hour before and after ingesting the cocoa to maximize its effects.
While chocolate can be used as a healthy diet supplement, moderation is key. Coco has a high calorie content, which can lead to weight gain if the body does not burn extra energy to maintain its caloric balance. Given that antioxidant rich chocolate can aid the body in ridding itself of free radicals, reducing blood pressure, maintaining cardiovascular health, and reducing the risks for heart disease and cancers, a small portion every day to replenish the body's antioxidant stores is a simple but powerful way of providing the body with the tools it needs to protect itself from the damage free radicals cause.

Cacao is responsible for that delicious, sometimes decadent food group we commonly know as chocolate, but it's oh, so much more. In fact, in its purest form, it has health benefits that might even cause you to furrow or lift your brow. But first -- what exactly is cacao?
What Is Cacao?
Cacao is an evergreen tree that generally grows from 10 - 30 feet in height and is native to the tropical regions of the American continents. It is found naturally in the Amazon River Basin as well as the Orinoco River Basin, and can also be found bearing its "fruit" at the base of the Andes Mountain range in foothill elevations of 600 - 1300 ft. above sea level. It is widely accepted by many cacao experts, that the tree was native to Mexico, and brought wild to be cultivated in South America.
It is now farmed in many tropical nations, and the largest commercial producer is actually the western African nation of the Republic of Côte d'Ivoire. Ghana, Indonesia and the Philippines also cultivate a prominent amount of cacao, and the Americas round out the majority of the commercial farming.
The fruit of the cacao, known as the cacao pod, ripens to a hearty yellow or orange, and weighs about a pound. Within it, you'll find a load of seeds, which are generally referred to as cacao beans. Each seed is made up of about 40 percent fat, which is often extracted and known as cocoa butter.
The Cacao Nib Craze

Caffeine in Chocolate - How Much is There?
Chocolates contain caffeine, but the amount contained depends on the variety and serving size. However, the stimulating effect we get from eating chocolates, which is similar to drinking coffee, is not caffeine. The main ingredient from chocolates that give us a natural high is called theobromine. It is known to have a longer effect to the nervous system compared to coffee. It promotes blood flow and brain activity. This is the reason why chocolates are lethal to animals because once they have eaten chocolates their nervous system will go haywire. On the other hand, humans can produce chemicals that work well with the ones found in chocolates.
Caffeine stimulates the central nervous system and is sometimes referred to as theine when found in teas. It is a xanthine alkaloid found in the coffee tree's leaves and beans. Caffeine is found in small doses in cacao and kola nut which is an ingredient in making cola beverages. It is also an effective natural pesticide in plants which paralyzes and kills many insects. Chocolates, which are made from cacao beans, contain small amounts of caffeine but does not provide the same effects compared to the caffeine found in coffee. Chocolate is also considered a stimulant due to its theophylline and theobromine content.
Theobromine is a bitter alkaloid found in the cacao plant where chocolates are made from. It is also called xantheose and belongs to the methylxanthine class of chemical compounds similar to theophylline and caffeine. The name theobromine comes from Theobroma which is a classification of the cacao tree. Even though it is considered to be similar to caffeine, it has a lesser effect on our central nervous system. Theobromine has been known to contribute to the belief that chocolates are aphrodisiacs and is known to increase heartbeat and dilate blood vessels which helps reduce blood pressure. However, theobromine which can be safely consumed by humans is deadly to animals. Small dogs can be poisoned if fed with chocolates from as little as 50 grams of chocolate.
